Chef Phillip Frankland Lee: Executive Chef and Owner

 

Chef Phillip Frankland Lee began his journey as a dishwasher at the age of 18. From there, he moved up the ranks through kitchens of Quinn Hatfield, Stefan Richter as well as Alinea and L2O. Through the stages of his career he developed a style of his own, and in 2013, he opened Scratch|Bar in Beverly Hills. In December 2015, Scratch Bar & Kitchen was reenvisioned and opened in Encino. In 2014, Chef Phillip was inspired to create a restaurant that serves just vegetables, and subsequently, The Gadarene Swine was opened in Studio City. Some may say it's vegan, but Chef Phillip's idea didn't stem from veganism, but rather from pure interest in organic vegetables. Both restaurants and Chef Phillip have received outstanding accolades, such as "Best Young Chef in America" by San Pellegrino, Zagat 30 under 30, #97 Best Restaurant 2015 in the U.S., in Opinionated About Dining, all of which inspires and grows the future of Chef Phillip’s venture. Chef Phillip also holds the record with The Food Network for Most Consecutive Wins, beating out the competition on Chopped, Guy’s Grocery Games and Cutthroat Kitchen. Chef Phillip also appeared on Bravo’s “Top Chef” Season 13 as a contestant.

Margarita Kallas-Lee: Executive Chef and Owner

 

Margarita Kallas-Lee hails from Latvia, where she grew up with her grandparents, who both loved cooking. From a very young age, she had a curious palate and would diligently watch those around her as they created unique flavors and dishes. After spending time cooking professionally at catering events around Los Angeles, she joined D'Cache in 2011 as its pastry chef. Chef Margarita reunited with her high school friend Phillip Frankland Lee, and the two were married in 2012. They decided to team up professionally at that point and started ventures together with Wolf Cuisine and then Scratch|Bar in both its Beverly Hills and now current Encino location. As a pastry chef, Kallas-Lee now designs and runs the dessert programs at Scratch|Bar & Kitchen, El Chavo and the upcoming Oh Man! Ramen.

Jonathan Portela: Head Chef, Scratch Bar & Kitchen

 

A New Jersey native born to Portuguese immigrant parents, some of Chef Jonathan’s earliest memories are of poring over cookbooks, where he’d search for new cuisines and recipes to try.  At 6 years old, he remembers eating at a local Mexican restaurant and having his mind blown by all the flavors. He began apprenticing  for no pay, and then found work at Patria in Rahway, NJ under chef Andrew DiCataldo, and then onto  Dani Garcia at Manzanilla in NYC.  As Chef de Cuisine for Junoon, a one-star Michelin restaurant, he worked under Vikas Khanna, a master of Indian cuisine. At 11 Madison Park (NYC), Jonathan became Chef de Partie. The West Coast called the Jersey boy, and traveling from Napa to Los Angeles, he ultimately connected with Chef Phillip Frankland Lee and helped build Scratch | Bar & Kitchen quite literally from Scratch. Chef Jonathan strives to inspire nostalgia in his guests. He wants to provide something that is completely different from what they are used to, something natural and honest and pure through the food.

Scratch Restaurants Inc was started when Chefs Phillip and Margarita Lee decided that they wanted to put their personal spin on what a restaurant concept could be. Although each of our concepts remain independent and unique to one another, the constant thread that ties all of Scratch Restaurants together is our dedication to the artisanal "from scratch" approach to hospitality.
